Recipe 64: Mexican Wedding Cakes

My friend Jordan was in town so obviously we had to get together and make cooks. This day has a simple theme: love.

Mexican Wedding Cakes! How Romantic! 

What’s with the love theme? I’ll explain.

Love Item 1: Christmas is over and the Valentine’s Day stuff is coming out in stores.

Let’s get baking.

Step 1: Gather ingredients: Flour, sugar, butter, pecans, salt, cinnamon, powdered sugar (not pictured).

I normally avoid pecans at all costs, but this one wouldn’t work without them. I struggled with this.

Step 2: In a food processor, combine flour, sugar, cinnamon, salt and pecans.

My KitchenAid mixer wasn’t feeling the love. I apologized.

Love Item 2: Anyone who knows us is aware that we’re mildly obsessed with Britney Spears. Jordan and I are going to her Vegas show in February. It opened on December 27 and our hearts ached that we couldn’t be there that day. Moral of this story: don’t question or challenge our love for Britney. We’ll defend her to the end.

Step 3: Add butter and pulse until dough is formed.

Pretty easy.

Step 4: Form a disk and wrap tightly in plastic wrap. Refrigerate for 30-60 minutes.

Don’t eat? Okay.

While we waited, we cheated and watched a short video of Britney performing. We don’t want to spoil any surprises, so we’re not going to watch any more.

I asked Jordan to line the baking sheet with parchment and she had some trouble.

Step 5: Pinch off into level tablespoons and roll into balls. 

Wait. Are you serious, Martha? PINCH OFF? I love you, girl.

Step 6: Bake for 20-25 minutes.

Love Item 3: While I wait, I put on my perfume. I mean, we played the game Love Letter.

Step 7: Let cool, then roll in powdered sugar.

You thought that I would be lonely…

Not as powdery as Martha’s, but I played it safe. I definitely choked on powdered sugar last time I ate these.

What did I learn?

  • I’m going to go crazy waiting until February to see Britney
  • Pinching makes no sense
  • If I wanna live fancy, I betta work bitch.

What do I need to learn? 

  • How hard do I have to work, bitch?

I don’t see Jordan very often, so I had to take this opportunity to show the love.

  1. You two are adorable! Your pictures cracked me up. I grew up calling these cookies Nut Puffs. Also seen them referred to as a Snow Balls. But I think Mexican Wedding Cakes is my favorite name for them. Thanks for sharing the recipe!

  3. When you go see Britney and you hear “It’s Britney, bitch” please picture Martha Stewart emerging in her classic button-down denim shirt gyrating like B-Spears. Also, these look GREAT and you guys look wonderfully coordinated in your stripes.
