Recipe 35: Pecan Sandies

Another nutty cookie comin’ atcha. Don’t fret, though. These aren’t nearly as offensive as walnuts.

These looked decent and also looked quick. I had the premiere episode of Here Comes Honey Boo Boo to watch and didn’t want to spend all night baking! 

Step 1: Gather ingredients: Flour, butter, chopped pecans, brown sugar, vanilla, salt.

Step 2: Beat butter and brown sugar until light and fluffy.

Step 3: Add salt and vanilla.

This is going well. No complaints yet.

Step 4: Gradually add flour until combined.

Look at that! So quick.

Step 5: Fold in pecans.

I actually folded (I think) correctly thanks to Nicole’s instructions during Mocha Chip Meringues.

Step 6: Roll into 1 1/2-inch balls and place on baking sheets. Bake 15-17 minutes.

Um, what is going on here? These don’t look like the picture!

Step 6.5: Read the recipe again for errors. Oops. Missed this step:

Step 7: With the dampened bottom of a glass, lightly flatten each ball.

Okay. Maybe they’ll cook more evenly this time.

Meh. Better, but still ugly.

I took the last batch and really flattened them. It made crisps, not cookies.

I think the finely, pre-chopped pecans I got may have been the reason they didn’t hold together? The ones in Martha’s picture have larger chunks.

Yields: 18 (But I doubled the recipe so Dustin could take some camping) – so 36
I got: 32

End time: 10:25 (1 hour, 20 mins)
Martha’s estimated time: 30 mins

What did I learn?

  • I’ve gotten cocky and stopped reading instructions thoroughly. Won’t do that again.
  • My oven keeps heating. It was preheated to 350 and was at 375 when I pulled out the last batch. I guess I need to keep my eye on it.

What do I need to learn?

  • Why so crispy? Oven too hot? Baking too long? Over mixing? Anyone know?

They went over well with the eaters, so that’s good. They basically tasted like butter and brown sugar. Can’t go wrong there.

I, however, was not impressed.

Those other girls be crazy if they think they gonna beat me, Honey Boo Boo Child!

    These were pretty good cooks. For the record, I like walnuts. How would we have baklava without them?

    Its the butter…If I only use butter my cookies always turn around the edges….umph!
